Chocolate Amaranth Pudding

Makes 4 Servings

1 cup amaranth
1½ cups water
1½ cups milk of choice
2 tablespoons unsweetened cocoa powder
Dark pure maple syrup, to taste
1 teaspoon vanilla extract
Pinch of salt
Optional toppings: shaved dark chocolate, fresh berries or sliced fruit, chopped toasted nuts

1. In a medium pot, bring the amaranth, water, milk, cocoa powder and salt to a boil. Lower the heat and simmer, stirring occasionally until the mixture is thick and creamy, about 30 minutes.

2. Stir in the maple syrup and vanilla. Serve warm or chilled, topped with shaved dark chocolate, fresh berries or sliced fruit, chopped toasted nuts, and an extra drizzle of maple syrup, if desired.
